Healthy Swaps: Coconut Cauliflower Rice + Palak Paneer + Cashew Cream (guaranteed crowd pleaser, vegan)
COCONUT RICE. On stove top mix 3 tablespoons unsweetened shredded coconut flakes, 1-2 tsp ghee, and 3 cups of blender-minced cauliflower (or store bought cauliflower rice)

PALAK PANEER (100% Crowd Pleaser) On stove or Instant Pot cook 2 teaspoons ghee with 1 tsp each of freshly mince ginger, garlic powder, cumin, add 3/4 cup water, let bubble 2 min, add 3 cups frozen spinach and cook high pressure 1 minute. Blend with immersion blender or just in a blender, return to instant pot and add cashew cream, lemon juice, salt, and chili powder. And add whatever “paneer” you would like- baked tofu, tempeh, mozzarella balls, halloumi, actual paneer. Your canvas!
